Grilled Portabello, Bell Pepper, & Goat Cheese Sandwich! Side of Asparagus & Skinny Girl White Wine (never had it before…) (Taken with instagram)
edit: what you can’t see is seriously how delicious this was! inspired by cooking light’s “dinner tonight” email. Made it for one, with 1/2T of EVOO for the peppers, mushroom, & asparagus. And I had bought 2 mushrooms, and misjudged the size of the first (cooked down really small) so I made a double decker of sorts with peppers in the middle (between 0.25-0.33oz of Mushroom total). The goat cheese was so so good. Used a George Forman grill and dried basil in with balsamic/oil mixture.
Grilled Pesto Chicken Sandwich for my Saturday night in.

2.5oz flattened chicken breast, grilled red pepper & tomato with melted provolone cheese. On a sandwich thin with 1 laughing cow & 10g Pesto between both sides.
I thought the pesto would kill this dish, but I didn’t even use 1 Tbsp and I felt like it was a lot. Blended it with LC cheese instead of mayo for more flavorful and fulfilling taste… Sided with grilled asparagus, white wine, & Catching Fire
less than 345 calories of delicious. + asparagus (25 cals) wine not included :)
Dinner :: Went to friends for night of Glee, New Girl, & 2 episodes of the Voice. She made a great salad where we put everything on it (red, yellow bell peppers, avocado, red apples). She boiled potatoes and I put in some of the new Philadelphia Cooking Cream Cheese instead of any milk, butter, or cream. It was flavorful, but lacking a little on the creaminess (understandably).
And then the entree was any’tizers. They’re yummy, don’t get me wrong. But tonight’s discovery of 2 points per buffalo chicken bite might not be worth it. Because believe you me, 3 pieces (serving size) is not a dinner and I’m having more…. So there goes 12 points. Which… I actually had in the budget okay for today, the rest of the day was good - but future reference, may not be worth it.
But probably better than anything BW3??
This week needs to stay pretty good, I have to save some splurging for the weekend trip to boyfriend-land.
Made from a cooking light recipe, had a nice kick from red pepper flakes & tumeric. And simple. 5 P+
Tricky photo :: When I made it, it wasn’t much (I mean, it’s 1/2c rice & 6 pieces of shrimp, what’d I expect) Then I put it in my little soup bowls (1c big) and LOOK! so much food.
